Bordering on Great Britain, Belgium and Picardy, Pas-de-Calais has taken advantage of the many influences which have brought a breath of fresh air to its rich and hearty cooking, reflecting the local people, the climate and the land.
Produce from the nourishing sea and these fertile lands, so bitterly won by our ancestors, traditional farming methods, cheeses and real ales, have given rise to many dishes, updated from old recipes by our chefs, who have earned a well-respected place in the national restaurant guides. Some of them have formed top quality professional “Clubs”, happily promoting the public image of our cookery, worthy of the Euro-regional qualification. In their restaurants, they have managed to uplift our sometimes maligned – but oh so tasty! - cooking to a noble level.

Les Toques d’Opales
This club operates in the Calais area. Its members are 12 family restaurant businesses, all committed to a quality charter for the last 10 years, in order to guarantee the authenticity of dishes prepared from local, seasonal produce.
Each restaurant has on its menu a « Toques d’Opale » suggestion costing between 25 and 30 €, from original recipes created by each of the chefs.

La Côte d’Opale Gourmande
Since 1993, the great chefs of the Côte d’Opale have come together to create, under their individual restaurant names, in their individual restaurants, in their individual styles, real regional and original cooking, prepared essentially from the best local sea produce and the inland market gardens.
Other food professionals have joined these reputed chefs. As passionate as each other about their speciality and their love of work well done, they each have the sole aim of selling perfectly delicious products to the public.
